Back to School...Pina Colada Smoothie!

 Back to school...
My favorite time of the year!
I don't know that my kids would totally agree with me on this, but I could tell that they were a little excited to get going.
We just started our 6th year of homeschooling.
What in the world?!?!
I've got a 7th grader, a 6th grader and a 4th grader.
Homeschooling is something that I am totally crazy about, yet we still take it one year at a time.
This year snuck up on me crazy fast, and I found myself not a bit prepared for our first week of school.
After chowing down massive amounts of fried food at the MN State Fair on Labor Day,
I decided our Back to School breakfast would be Pina Colada Smoothies.
I found this recipe on Pinterest...It's a Paula Deen recipe.  And, it's so good.
In fact, we had it for breakfast this morning too!
 Pina Colada Smoothies
1 cup of pineapple
1 cup unsweetened coconut milk
1 banana
1/4 cup ice
2 tsp honey

Blend together and enjoy!

I use frozen pineapple and usually frozen bananas, so I skip the ice.
I have always doubled it too, so I just use 1 can of coconut milk.
Read the labels on coconut milk!  It is so frightening what they put in coconut milk!
I like Trader Joe's Light Coconut Milk the best.
It only has coconut milk and water.
I want to make these into little freezie pops...mmmm.
 The first day of school was spent discussing what we wanted our year to look like.
(Though I already had all my ideas in writing)
I had tried (unsuccessfully) to get the kids to chat about school during the summer!
Day 2 was spent on a field trip with friends.
The Bakken Museum is a fabulous science museum right off of Lake Calhoun.
 This old house was beautiful!
 After enjoying the museum, we had a little picnic at Lake Calhoun.
 Had we known it was going to reach the 90's, we would have for sure brought swim suits!
 Daisy started Cross Country this fall and ran her first race last week.
 Our first week went good, it was by no means great.
One of the things that I think homeschoolers spend the most time on...
Character.
(Ours and theirs!)
The amount of time that we spend together...24/7.
We get to spend our whole day learning (and re-learning) how we should talk to each other.
How we should treat each other.
How we're family, for better or worse, forever.
At the end of the day, we've always got some learning done.
Math, Spanish, Bible, Reading, Science, History...
But my favorite thing (and sometimes the most exhausting thing) is having the time to help them become:
competent, confident, capable, independent, kind, loving and generous...
human beings.
I hope your back to school is getting off to a great start!

Add rum when necessary.
